I've never been a huge fan of leftovers. I know, not a very good attitude. I always thought they were a bit icky. But I cooked a nice dinner last night for my family, parents & siblings for fathers day and as usual there was too much leftover....
The spread I made last night was make-your-own mini gourmet [as opposed to the usual minced beef, cheese, sauce variety] hamburgers. There were little bread rolls, beef, chicken, salad & sauces.
I roasted the beef with onions & garlic along with the tandoori chicken in the afternoon. Then sliced them both thinly.
We had caramelised onions, beetroot, homemade salsa, thinly sliced jarlsberg, bacon, egg, shredded lettuce, mashed avocado, tomato, sliced vintage cheddar, sweet chilli relish, homemade kale & jalapeño relish, tomato, homemade salsa, a variety of sauces.
So everyone had a few nice little burgers each with a variety of toppings. I know I enjoyed them and will do this again for family.
Anyway, after the meal I put all the bits & pieces into little containers in the fridge and then for lunch today, I brought them all out again to make myself another delicious meal.
I toasted a piece of organic wholegrain spelt ( trying my best to avoid to white bread, not ready to give it away altogether ) and then cut into 2 triangles. On one I had thinly sliced roast beef, beetroot, cucumber, Spanish onion, shaved Parmesan, my kale & jalapeño relish and a trickle of pomegranate seeds.
On the other I had tandoori chicken, cucumber, homemade salsa and my kale & jalapeño relish.
Oh. My. Goodness!
Totally yum. I think there might just be enough left for dinner.
Now, I'd love to be able to share my relish recipe but I kinda just winged it. I can tell you I added appoximately the following:
Cup (ish) fresh kale
Big squirt gourmet garden hot chilli
Tspn ginger paste
Radish
About 15 jalapeños
3 macadamias
3 pecans
2 brazil nuts
2 tbspn corn pickle relish
1 tbspn sweet chilli relish
I then blended in my mini chopper & voila! Mega delish.
