The other week I blogged about how I was going to try 7 new salad/veg dishes [combo of hot & cold] within the next 7 days.
So last week I made 5 out of the 7 new recipes. The week of course coincided with Easter & that long long weekend brought about spontaneous & changed plans. I did make one of the new salads twice however to share with family and also squeezed in one of my tried & true [and delicious] recipes too.

Veggie, rice & egg surprise: [top left, recipe here].
Always a surprise because I use at the end of the week to use up whatever is in my veggie crisper! On this one I made the egg into a pancake, rolling up & slicing into strips instead of the egg net.
Mixed Tomatoes & Herbs: [top right, recipe here].
I made exactly as per the recipe. So easy, loved it. I used coriander & parsley. I also added some unbuttered seedy grain toasted bread & piled on the tomatoes, bruschetta style. Made for a fabulous light dinner.
Beef Rice Paper Rolls/tuned into Beef salad/veg: [middle left, recipe here].
I replaced some of the more salad items with the veg I had on hand. The beef was divine & I was surprised but all the kids loved the dish. I had made a modified dinner for the kids with the same veg but not the beef but they kept pinching ours. This week I bought twice the amount of beef & cannot wait to eat this again. Nice to have beef on my menu!
Brussel Leaf & baby Spinach Saute: [middle right, recipe here].
I made this twice, the first a lunch salad for myself with a variation of wholegrain mustard, lime & honey. The second I made as a side for the Easter lunch I shared with my family & I loved it both times. Funny, only the women sampled it. I think the men heard brussel sprout & they passed over it!

I had planned to make this along with Jamie Oliver's cajun chicken but ended up taking it along to a little dinner I had with cousin as a side dish. It was delicious!
I also made some of my yummy salsa during the week. I never tire of this!
